Have you been using a good recipe? I have a box but I haven't figured out what to do with it yet!
I just make it like rice, really. I've heard you can toast it a little first (put it in a dry or VERY lightly coated pan until fragrant), but I pretty much just bring it to a boil, then reduce to a simmer, slightly covered, for about 15 to 20 minutes. I'm sure, like rice, you can do a lot more with it if you want. It seems pretty versatile.
quinoa is amazing. its loaded with amino acids and protein and had more calcium than milk.
Double the amount of water to amount of quinoa, ie 1c quinoa and 2 c water and simmer 15-20 mins.
3/4c quinoa whizzed in the blender makes 1c of flour, keep in fridge and use in pancakes etc.

Heres something really yummy I made the other night, its got feta cheese so vegans will have to substitute something else tasty...

saute and onion in a bit of olive oil, add a good t spoon of cumin seeds and cook for bit longer, then add 2 c of stock and 1 c of quinoa, cover and let it absorb liquid slowly.
Meanwhile I toasted and salted about 3/4 c of raw cashew nuts, (you could buy ready roasted/salted but I am dubious about the amount/quality of oil that gets used so I do it myself. or you could just use them raw too..)
once the quinoa is cooked and most water absorbed I put a massive pile of shredded silverbeet on top and let it cook covered then stirred it in.
All that was left was to stir through the cashews and some chunks of feta.
Im telling you, this was divine!! and really quick and easy too...
